Quick Soup for the Soul: Kale, Spicy Chicken & Potato Soup

🍜 Quick Soup for the Soul – Kale, Spicy Chicken & Potato Soup 🍜

1 cap-full of vegetable oil

1 pack (10 oz) Chicken Sausage

4 cups milk (unsweetened Almond Milk was used here )

4-6 medium potatoes (cubed)

1 cup water

1 onion, chopped

1/2 tsp. crushed red pepper or more to taste

1/2 tsp. black pepper

1 can Cream of Celery

1 pack chicken bouillon

1 pack beef bouillon

1/2 tsp. basil

3 cups torn kale leaves

Prep time: 10 min; Cook time: 35 min

  1. Heat oil in a large soup pot over medium heat. Slice sausage into small chunks, cook and stir until browned, about 10 minutes.
  2. Stir in milk and potatoes, then add onion, all red pepper and bullion, and water. Stir slightly, bring to a boil, add cream of celery, reduce heat to low and cook uncovered until potatoes are soft, about 25 minutes.
  3. Season with black pepper and basil, add kale into soup and simmer until kale is tender – about 10 minutes.
