🍜 Quick Soup for the Soul – Kale, Spicy Chicken & Potato Soup 🍜
1 cap-full of vegetable oil
1 pack (10 oz) Chicken Sausage
4 cups milk (unsweetened Almond Milk was used here )
4-6 medium potatoes (cubed)
1 cup water
1 onion, chopped
1/2 tsp. crushed red pepper or more to taste
1/2 tsp. black pepper
1 can Cream of Celery
1 pack chicken bouillon
1 pack beef bouillon
1/2 tsp. basil
3 cups torn kale leaves
Prep time: 10 min; Cook time: 35 min
- Heat oil in a large soup pot over medium heat. Slice sausage into small chunks, cook and stir until browned, about 10 minutes.
- Stir in milk and potatoes, then add onion, all red pepper and bullion, and water. Stir slightly, bring to a boil, add cream of celery, reduce heat to low and cook uncovered until potatoes are soft, about 25 minutes.
- Season with black pepper and basil, add kale into soup and simmer until kale is tender – about 10 minutes.
Kale: High in Vitamin A, C, and K. Helps with vision, immune system, protects against cancers and aids in bone health. High in anti-inflammatory properties, calcium and iron.
Almond Milk: High in flavonoids, lowers levels of bad cholesterol and protects the heart. Almonds are nutrient rich, high in protein, vitamin E, potassium, iron, vitamin A, calcium, and magnesium.
Chicken Sausage: (the type used above) high protein, free from antibiotics, gluten free, pork free, no nitrates.

Red Potatoes: FULL of nutrients, high vitamin C, more potassium than a banana, naturally fat-free, zero sodium or cholesterol.
